Plantation Australia Palo Cortado Cask
A single cask expression from merchant bottlers Planteray; this limited edition bottling from 2022 was first distilled at Beenleigh Distillery just outside Brisbane in 2009. A complex and varied distillate owing to its use of 2 distinct fermentations; 12 days with Pombe Yeast (a yeast commonly found in the production of African Millet beer) and a further 3 day fermentation with Cerivisiae (Brewer’s Yeast). This Rum spent 11 years aging in the sub-tropics in American Oak before being sent to Europe for 1 year of continental aging in Ferrand Cognac casks and finally a 4-month stint in a barrel formerly used for Palo Cortado Sherry. With moderate esters and no added sugar it is a deliciously balanced Rum featuring notes of orchard fruits, grapefruit zest, cinnamon, anise and pistachio with a nice oxidative hit from the Palo Cortado.
